these brownies are heaven. pure heaven. just look how fudgy!


i’ve been wanting to make cookies n cream brownies ever since i made my super soft (and easy!!) cookies n cream cookies. mmmmm.

while i have my go-to brownie recipe made from scratch (see bottom of my post here for my super fudgy brownie recipe), i actually used a BOX mix (the horror!) for these brownies.

i trusted my blogging pal Lindsay @ Pinch of Yum when she said this boxed brownie mix makes the best brownies she’s ever had.

you can certainly use your favorite brownie recipe, but i was in a rush and wanted to save on time.  i love baking shortcuts where i can find them!

this recipe is fool-proof. mix up your brownies according to the package instructions.  pour 1/2 of the batter into a 9×13 inch baking pan.  line whole oreos on top of bottom batter layer. pour the rest of the batter on top of the oreos. bake according to package instructions. Averie’s oreo cookie stuffed brownies with vanilla buttercream frosting inspired me to top these cookies n cream brownies with icing & sprinkles.  i used store bought cream cheese icing.  again, who doesn’t love shortcuts?!


my favorite part about these brownies? the oreo cookie melts and creates an unbelievably gooey, fudgy brownie encasing the sweet oreo cream centers. i die.

DIRECTIONS

  1. Preheat the oven to 325F. Spray 9×13 inch baking pan with nonstick spray. Set aside.
  2. In a large mixing bowl, prepare the brownie mix as directed with the egg, oil and water.
  3. Pour 1/2 of the brownie batter into the prepared baking dish.  Line Oreos in rows (3 down and 5 across). Pour the rest of the brownie batter over the Oreos.
  4. Bake according to box instructions or until toothpick inserted in the middle comes out almost clean (i like my brownies fudgy!).  Mine took about 40 minutes.
  5. Allow to cool completely and frost with cream cheese icing.  Top with sprinkles and stick in the refrigerator so the frosting sets.  Once the frosting is set (about 1 hour), cut into squares. Enjoy!

funfetti granola bites.

oh dear.

what have i done?

somehow, someway, sprinkles hopped into my bowl of oats…

now, i’ve shared my love for addiction to granola…  i’ve shared my love for addiction to funfetti

let’s just combine the two and see what happens?!


mmmm. that’s my kind of energy snack.

now can someone please clean the runaway sprinkles hiding on my kitchen floor?!

funfetti granola bites

(categorized under granola & healthy stuff)

makes about 20 balls

  • 2 1/4 cups whole rolled oats
  • 1/2 cup yellow cake mix (the dry cake mix)
  • 1/2 cup light corn syrup (or honey)
  • 1 tsp. vanilla
  • 1/2 cup sprinkles (more or less, depending on your love for addiction to sprinkles)

DIRECTIONS

  1. Combine all ingredients into a large bowl.  Stir well, until all oats are moistened.  This will take some elbow grease!
  2. Refrigerate mixture for AT LEAST 1 hour (preferably 2 – you want the whole mixture pretty stiff and stick together well)
  3. Remove from refrigerator and roll into balls. Enjoy!

ooops i did it again.

i made my funfetti cake batter blondies. again.

sorry i’m not sorry.

so, i originally posted my funfetti cake batter blondies back in december. and it is, by far, my most popular recipe on SBA.

i get countless emails from readers and friends letting me know they’re a huge hit anytime they’re made.

gooey. dense. cake batter. sprinkles. white chocolate. all in one little blondie.

i’ve probably made them a dozen times since i came across the recipe 6 months ago. yes, they are that good.

i made them again last night, using a ton more sprinkles, so they almost look like tie-dye blondies. love it!

so, just in case you missed these, here there are again. you’re welcome.

funfetti cake batter blondies

categorized under brownies/bars
  • 1 box yellow cake mix
  • 1/4 cup canola oil
  • 1 egg
  • 1/3 -1/2 cup milk
  • 1/2 cup sprinkles ( i used only 1/4 cup in this post, but the more sprinkles, the better in my book)
  • 1/2 cup white chocolate chips

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine first four ingredients in a large bowl.
  3. Add the milk slowly. You want to cake batter to be as dense & thick as possible.
  4. Mix in the sprinkles and white chocolate chips.
  5. Pour into 8 x 8 baking pan, sprinkle a few more sprinkles on top, and bake for 25-30 minutes until edges are just turning brown.
*the blondies will look like they are not fully done because the center will be quite gooey, but that’s what you want!  After about 30 minutes of cooling, they will be easy to cut using a serrated knife.

peeps s’mores & chocolate dipped peeps.

i had a little fun with peeps this weekend. i cannot get enough of those sugary little marshmallow blobs.  so colorful! so sparkly! soooo sugary!

i found the idea for peeps s’mores somewhere on pinterest. are you addicted to pinterest as much as i am? i could waste HOURS on that site….

anyway, as a lover of anything and everything s’mores, i knew i had to whip these peeps s’mores up for easter time. they are so mindnumbingly easy to throw together. grab some graham crackers. sandwich some chocolate and a peep in them. microwave for 20 seconds. smoosh down. boom! peeps s’mores.

while i was throwing these together, i rememberd another peep recipe i recently stumbled upon over at Love From the Oven: chocolate dipped easter peeps. Christi is a peeps master!  her site is another site i could waste HOURS on… 🙂

these are probably even easier than the peeps s’mores. dip peeps into melted chocolate. sprinkle on some sprinkles. allow to cool. eat until your heart’s content. 🙂

i shouldn’t even call these peeps goodies “recipes” since they are SO easy to throw together. perfect for last minute easter treats!

DIRECTIONS

  1. Break graham cracker sheet in half. Set one half aside.
  2. Sprinkle other half with chocolate chips (or a couple small pieces of a hershey’s bar).  Top the chocolate with a peep.
  3. Microwave for about 20 seconds (the peep will begin to puff up). Remove from microwave and top with the reserved graham cracker half.  Squish down.  Enjoy!

DIRECTIONS

  1. Line a large baking sheet with parchment paper. Set aside.
  2. In a microwave safe bowl, break up the white chocolate bar into small pieces so they melt easily.  Microwave on high for 30 seconds.  Remove and stir for about a minute.  The chocolate will continue to melt as you stir. If needed, microwave in 10 second increments until all is melted and smooth.
  3. Grab a peep and gently dip it into the pool of melted chocolate. Shake off any excess chocolate. Sprinkle with sprinkles while the chocolate is still wet.
  4. Place each peep on parchment paper lined baking sheet and refridgerate for about 10 minutes for the chocolate to harden. Enjoy!

hiiiii. are you ready for the most amazing, no bake, ready in 5 minutes, knock-off-your-socks recipe?!

it’s no secret that i love cake batter flavored everything. my funfetti cake batter blondies are my most popular recipe, by far.

it was only a matter of time until i expanded my recipe archive to feature cake batter rice krispie treats too.

   

gooey,  super marshmallow-y, full of colorful sprinkles, and bursting with that cake batter flavor you love. do i need to convince you more to make these NOW? 😉

cake batter rice krispie treats

(categorized under cupcakes & fun sweets & brownies/bars)
  • 3 tbsp butter (i use land o lakes light butter)
  • 1 (10 oz.) bag of marshmallows
  • 2/3 cup boxed yellow or white cake mix (the dry cake mix)
  • 6 cups rice krispie cereal
  • 1/2 cup sprinkles

DIRECTIONS

  1. Spray a 9×13 baking pan with nonstick spray. Set aside.
  2. In a large saucepan over low heat, melt the butter.
  3. Add the marshmallows and stir constantly. Once the marshmallows are completely melted, stir in the dry cake mix. Turn off the stove.
  4. Stir in the cereal under it is completely coated with the marshmallow mixture. Mix in half of the sprinkles. Press into prepared baking pan and top with the remaining sprinkles. *when i press rice krispie treats into a pan, i use a spatula sprayed with nonstick spray, making it easier to press down
  5. Chill for at least 30 minutes and cut into squares.

there is some magical ingredient in desserts that just makes stress melt away. i’m pretty sure it’s the chocolate.

so after hectic workweek and facing a to-do list that goes on for a mile, i knew i needed some chocolate therapy. enter rosie @ sweetapolita. i spotted rosie’s chocolate dipped brownies a few weeks ago on pinterest and knew i had to make them.  rosie’s site is full of mouthwatering cakes, cupcakes, and sprrrrrrinkles. 🙂

    these babies are soooo easy to make. simply bake up your favorite brownie recipe (the one i used is below), cut into little rectangles, freeze, then dip them in chocolate and sprinkles. ta-da! a stress reliever at its finest.

i wanted to name these chocolate covered brownies, but that would be a lie. they are only dipped. it was darn near impossible to fully dip them in the chocolate and still have them look cute, trust me.

  • 1 prepared batch of your favorite brownies (box mix OR see my recipe below)
  • 2 semi-sweet bakers chocolate blocks (in baking aisle- i prefer it over chocolate chips for coating)
  • sprinkles

DIRECTIONS

  1. Prepare & bake brownies according to directions. Let cool completely.
  2. Cut brownies into rectangles and freeze at least 2 hours on a baking sheet (pictured above).
  3. Once brownie rectangles are frozen solid, remove from freezer.  In a medium size bowl, break up the chocolate bars and melt for about 1 minute in microwave, stirring every 20 seconds. Microwave for longer until chocolate is completely smooth.
  4. Dip brownie tops into melted chocolate and decorate with sprinkles.  Chill in the fridge for about 20 minutes until chocolate is hardened. Enjoy!

Basic Fudgy Chocolate Chip Brownies

  • 1 stick butter
  • 8 ounces coarsely chopped bittersweet chocolate
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1.5 cups semi-sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees. Spray 9×13 inch baking pan with cooking spray. Set aside.
  2. Melt butter and chocolate in a medium saucepan on medium heat, stirring constantly (about 6 minutes). Remove from heat and let cool to room temperature (about 15 minutes).
  3. Stir sugar into cooled chocolate/butter mixture until combined.  Add in the eggs one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour, salt, and chocolate chips.
  4. Pour batter into prepared pan, smoothing the top with a knife. Bake for 40-45 minutes, until a toothpick comes out *almost* clean.

…..soooooo i considered it my lucky day when i stumbled upon jessica’s one bowl vanilla cupcakes for 2.  that’s right. one bowl. two cupcakes. easy peasy.

these vanilla cupcakes are absolutely perfect. sweet, buttery, soft, & full of rich vanilla flavor. perfect to share (orrrrrrrr not). like jessica notes, you can have fun with these and add any goodies into the batter like chocolate chips, funfetti sprinkles, etc. i left mine plain inside but went to town with the nonpareils on top 😉

INGREDIENTS

(categorized under cupcakes & fun sweets)

  • 1 egg white
  • 2 tbsp sugar (i used splenda baking blend)
  • 2 tbsp butter, melted
  • 1 tsp vanilla
  • 1 1/2 tbsp milk (i used vanilla almond milk)
  • 1/4 cup flour (i used white whole wheat)
  • 1/4 tsp baking powder

DIRECTIONS

  1. Preheat oven to 350 degrees. Line a muffin pan with 2 liners.
  2. In a small mixing bowl, whisk together the egg white and sugar until combined.
  3. Stir in the vanilla, melted butter, and milk. Add flour and baking powder and mix everything together well.
  4. Divide the batter between two cupcake liners and bake for 10-12 minutes. Let cool completely and frost/decorate as desired.

if you are looking for a crowd pleaser, look no further! these mini chocolate chip cookie sandwiches, stuffed with cream cheese frosting and rolled into colorful sprinkles, are the perfect bringalong to any kind of get together. not only are they adorably festive (roll them in different colored sprrinkles for different occassions!), they are sweet and perfectly delicious.

*make sure the dropped cookie dough portion of each cookie is tiny, i’m talking like tiny little 1 inch balls or smaller.

*make sure they are uniform in size because each cookie needs a matching buddy to sandwich the cream cheese frosting. 🙂

i’d say these cookies are perfect, just like my rainbow m&m cookies

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tbsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 cups mini chocolate chips
  • cream cheese frosting (i used store bought)
  • sprinkles

DIRECTIONS

  1. Preheat the oven to 325 degrees.
  2. In a small bowl, mix together flour, baking soda, and salt. Set aside.
  3. In a medium-sized bowl, cream together the melted butter and both sugars until well blended. Beat in the vanilla, egg, and egg yolk until creamy. Gently stir in the flour mixture until just blended (do not overmix). Stir in the chocolate chips by hand with a wooden spoon.
  4. Drop cookie dough into small 1-inch balls and bake for 8-9 minutes, until the edges are lightly browned. Let the cookies cool completely on a wire rack. (*note: it is extremely important to let them cool completely. you do not want the warm cookies to malt the frosting!)
  5. Pour sprinkles onto a large plate (or any flat pan/sheet/surface). Spread cream cheese frosting onto the underside of one cookie and sandwich another cookie bottom gently against it. Roll the sides into the sprinkles to coat. Enjoy!!

here is my original go-to recipe for chocolate covered pretzels.  i make them for nearly every holiday, using different colored sprinkles to reflect the holiday colors. i usually use honey-wheat pretzels but decided to do something a little different for valentine’s day.  making these could not be easier! i think white chocolate would look extra pretty with the valentine’s day sprinkles too. 🙂

INGREDIENTS

DIRECTIONS

  1. Line a large baking sheet with parchment paper. Set aside.
  2. In a microwave safe bowl, break up the chocolate bars into small pieces so they melt easily.  Microwave on high for 30 seconds.  Remove and stir for about a minute.  The chocolate will continue to melt as you stir. If needed, microwave in 10 second increments until all is melted and smooth.
  3. Take a pretzel and dip into chocolate, using a spoon to evenly cover 1/2 of the pretzel. Shake the pretzel a bit to remove any excess chocolate.
  4. Immediately cover the chocolate with sprinkles before the chocolate hardens.  I usually do this over a paper plate, to catch the sprinkles that miss the pretzel.
  5. Place each pretzel on parchment paper lined baking sheet and refrigerate for about 10 minutes for the chocolate to harden.  Enjoy!

devil’s food cake mix cookies

aka the EASIEST cookie i’ve ever made! just like my peanut butter sweethearts, these cookies require minimal clean up and can be made in just one bowl. take a box of devil’s food chocolate cake mix, a couple eggs, butter, a splash of vanilla, and a scoop of flour and you can have homemade cookies in just 10 minutes. 🙂

they are super soft, almost a cross between a fudgy brownie and a chewy cookie. you may leave them plain or roll them in some festive sprinkles, like these tiny hearts for valentine’s day. i also decorated a couple cookies with some red mini m&ms i had leftover from my rainbow m&m cookies. feel free to use any sprinkle/candy of choice. 🙂

INGREDIENTS

makes about 30 cookies

  • 1 box chocolate cake mix (any brand- i used pillsbury devil’s food)
  • 1 1/2 tbsp flour
  • 1 stick softened butter
  • 2 eggs
  • 2 tsp vanilla
  • sprinkles for rolling (optional)

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Add all ingredients to a bowl and mix well. it will take a bit of elbow grease to get it all combined!
  3. Spill some sprinkles onto a plate.  Form dough into tablespoon-sized balls and roll in the sprinkles.
  4. Bake on an ungreased baking sheet for 10 minutes. Let cool on the sheet for another 10 minutes after removing from the oven.  Enjoy!
